The Controlled and Protected Designation of Origin (AOC / AOP) “Corsican chestnut flour” is a guarantee of quality according to several criteria, in particular by respecting traditional techniques without chemical treatments for its production, and by using chestnuts from island.

Corsican chestnut flour is characterized by a sweet taste, finesse and purity with a biscuit flavor. It is often used for many traditional Corsican recipes, or for preparations such as fritters or pulenda.
